Main Course Recipes ...

CAPE BOBOTIE
A uniquely South African Dish (of Cape Malay origin)

250 ml prepared Intaba™ Rooibos tea (use 1 tea bag)
1 kg minced meat
1 slice bread
2 cups milk
2 eggs
½ cup seedless raisins
1 grated onion
2 table spoons apricot jam
2 table spoons fruit chutney ("blatjang")

25 ml cooking oil or margarine
1 table spoon curry powder
2 teaspoons turmeric
½ cup vinegar
2 teaspoons salt
Black pepper
Nutmeg
4 bay leaves

Optional:
½ tin cream of chicken soup, a few pieces bacon, a few slices banana, coconut

Soak the raisins in the rooibos tea
Sauté the onion in oil or margarine
Add mince meat to the onion and stir until meat is cooked.
Add the raisins, rooibos tea, apricot jam, salt, pepper, nutmeg, vinegar, curry powder, turmeric, chutney (and soup: optional)
Soak the bread in ¼ cup of milk and keep the remaining milk separate
Add the soaked bread to the mixture
Put mixture in a baking dish
Put bacon, banana and bay leaves on top of mixture
Add eggs to remaining milk, beat and pour over mixture
Add coconut on top
Put in oven and bake at 180 C for 45-60 minutes
Serve with yellow rice (rice coloured with turmeric)
